Shrimp Recipes

Shrimp is generally considered to be America's favorite shellfish, and this could be because there is a variety of ways to cook and eat them. Shrimp are also delicious to eat on their own or as an ingredient in a larger dish, as they add a superb flavor to many recipes.

Fresh shrimp are highly perishable, but they freeze perfectly. Fresh shrimp that is sold at the market is usually thawed and displayed on ice. It should really be marked as previously frozen, but it rarely is. For this reason, it is best to buy your shrimp on the day you are going to serve it to avoid having to re-freeze it. You should have the shrimp wrapped with ice at the market and keep it on ice until you are ready to cook it. Ordering shrimp online is a great way to get fresh shrimp right from the seller; that way, there is no middleman involved, and it will get to you quicker and be fresher.

Shrimp can be prepared with the shells on or they can be shelled and deveined before cooking. The sand veins of jumbo and extra large shrimp are dark and may contain grit. These can be removed with special tools or the point of a sharp knife. Shrimp are easy to cook by any methods, but make sure you don't overcook them, as they can turn tough. Shrimp are cooked when they turn pink. For the best results, cook the shrimp the minimum amount of time specified in a recipe and keep your eye on them.

Here is a quick and simple recipe for spiced shrimp for two.

Spiced Shrimp

1 pound of raw, unpeeled jumbo or extra large shrimp
1 tablespoon of olive oil
freshly ground black pepper
salt
Tabasco sauce or some other type of hot pepper sauce
Worcestershire sauce
3 lemons for the juice only
½ stick of butter
Directions:
  1. Preheat your broiler.
  2. Spray a metal baking pan with non-stick spray. Make sure the pan is big enough to spread the shrimp in a single layer.
  3. You can peel and devein the shrimp or leave the shells on and then drizzle the olive oil over top of the shrimp.
  4. Heavily pepper the shrimp. If the shrimp is being seasoned through their shells, make sure you use plenty of everything.
  5. Add the salt, hot sauce, Worcestershire sauce and the lemon juice.
  6. Cut the butter into small pieces and scatter them over the shrimp.
  7. Broil the shrimp for about 10 minutes, depending on the size of the shrimp. When the shrimp is pink, it is done and ready to eat.
  8. Take the shrimp out of the oven and cool them for a minute. Then divide the shrimp and sauce into two portions and serve them immediately with French bread and cold beer.
