Crab Recipes
You can cook crab in a variety of ways and there are many tasty recipes for each method. Since king crab is one of the most favorite and delicious types of crab available, this recipe will focus on Alaskan king crab.
King Crab Melt Sandwiches
- To make four servings of this seafood delicacy you will need:
- 2 pounds of frozen king crab legs (not thawed) or 1 pound of fresh picked over crabmeat 2 tablespoons of fresh limejuice
- 1/2 cup of mayonnaise
- 2 teaspoons of Creole or other coarse grained mustard
- 4 one-inch-thick slices brioche or challah
- unsalted butter, softened if desired
- 4 tablespoons of freshly grated Parmesan cheese
- lime wedges
- chopped fresh chives
- Preheat your oven broiler.
- If you are using the king crab legs, split them lengthwise and cut them crosswise into four-inch lengths.
- Place the king crab legs shell side down on a steamer rack that is set over a kettle of simmering water and steam them covered, for seven to 10 minutes, or until the crab legs are heated through.
- Remove the steamer rack from the heat and let the king crab stand, covered, until it is just cool enough to handle.
- Working over a bowl, extract the crabmeat from the shells with a fork and discard any cartilage, while allowing the juices to gather in a bowl.
- With your fingers, separate the crabmeat into large shreds. If you are using lump crab meat, put it in a bowl but do not shred it. Then add 1 tablespoon of limejuice and toss to combine it.
- In a small bowl, whisk together the remaining tablespoon of limejuice, mayonnaise and mustard until it is smooth. Pour the sauce over the crab and toss to coat it.
- Season the crab mixture with salt and pepper and chill it, covered, for 30 minutes.
- Lightly toast the brioche or challah and with a 3 1/4-inch round cutter, cut out rounds.
- Lightly butter the toast.
- Spoon a quarter of the crab mixture into a 1/2-cup measure.
- Holding a toast round on top of the mixture, invert the crab onto the round and place it on an ungreased baking sheet.
- Repeat this procedure with the rest of the crab mixture and toast rounds, and sprinkle a tablespoon of the grated Parmesan cheese over each of the sandwiches.
- Place the king crab sandwiches in the oven and broil them about three inches from the heat source until the cheese is melted and golden.
- Serve the king crab sandwiches with lime wedges and garnish them with chives.
