If you like your lobsters to come from the clear cool waters of the Atlantic Ocean, then chances are you will be getting Maine lobster. The number one lobster in the U.S. is Maine lobster as approximately 40 million pounds of the country's lobster supply is caught off of the coast of Maine. That is about 90 percent of the nation's lobsters.
Maine lobsters are marketed as: Jumbo, which are more than two pounds, large, which weigh between 1.5 to two pounds, quarter, which is 1.25 to1.5 pounds, chicken, which is one pound, and chix, which is less than a pound. Some of these lobsters have been known to grow to about three feet in length and weigh over 40 pounds. Any lobsters of this size are estimated to be at least 100 years old.
If you are addicted to Maine lobster but live in the west, north, or south, have no fear as Maine lobster is shipped daily across the country to your favorite restaurants, supermarket tanks, fish markets and people's homes. Of course, you will pay a pretty penny for Maine lobster, but if you are a lover of lobster you will know it's well worth it as many lobster fans swear there's a big difference in the taste of Maine lobsters.
If you do have Maine lobsters shipped directly to you remember that they can only survive for about 36 hours. If it's possible, the lobsters should be cooked and served on the day they arrive. If that is out of the question then the Maine lobsters should be partially cooked and then refrigerated until they are needed. When you take the lobsters out of the fridge remember you will have to finish cooking them.
If you like to eat your Maine lobster at home there are a few ways to cook this ocean pearl. They can be broiled, grilled, boiled and steamed, and either way, they are a seafood classic. The simplest way to cook your Maine lobster is probably to boil it as all you really need is a large stockpot and a source of heat. These cooked lobsters are delicious as they are or you may want to smother them with melted butter, a sauce or some of your other favorite seasonings. Of course lobster also goes great with other seafood and as part of surf and turf with steak and other meats.
